How to Prepare Bravo Probiotics Yogurt/Kefir Drink at Home

INGREDIENTS (AT LEAST 3 MONTH SUPPLY) Each Kit contains powders to prepare 13 liters (quarts) of product. Each kit contains:
– 13 Sachets of Culture Starter (blend of active cultures – cultured kefir grains with Lactobacillus bulgaricus, Streptococcus thermophilus, Bifidobacterium infantis, Bifidobacterium bifidum, Bifidobacterium lactis, Bifidobacterium longum)
– 13 Sachets of Probiotic Complex (blend of maltodextrin and microbial cultures: Lactobacillus salivarius, Lactobacillus acidophilus, Lactobacillus paracasei, Lactobacillus rhamnosus, Lactococcus lactis, Bifidobacterium lactis, Bifidobacterium infantis, Bifidobacterium bifidum)
– 13 Sachets of Bovine Colostrum (organic, Swiss origin)

INSTRUCTION FOR THE PREPARATION OF 1 LITER (1 QUART) OF FERMENTED DRINK Preparing the yogurt/kefir is straightforward; it only requires ruminant milk, raw or full fat whole cows milk, is recomended. The preparation is straightforward. It takes only a few minutes of work, and 24- 48 hours later (depending on room temperature), you will have a superior probiotic product ready to drink.
The directions provided below refer to COWS MILK. If you decide to use pasteurized cow milk or raw cow milk, you will need to boil the milk as described below and shown in the video to obtain a fully fermented product. This is a very important step! Do not boil it if you decide to use ultra-pasteurized (UHT) cow milk. UHT milk needs only to be warmed up.
Directions for preparation (with no yogurt maker) 1. Boil 1 litre of milk, stirring well continuously to keep it from sticking to the bottom of the pot until it begins to rise or boil. Milk boils when it rises up to the rim of the pot, and iot does this very quickly. Remove the pot from heat immediately it boils. Do not over-boil the milk. See the related video available at the bottom of this page. Skip this step in the case of Ultra-Pasteurized (UHT) cow milk. As written above, in the case of UHT cow milk, pour the milk into a glass bowl and warm it up (we do not recommend using a microwave, however, if using a microwave oven for 2 minutes at maximum potency.)
2. Cool the milk to room temperature (68-86°F) without stirring it (leave it at room temperature for a while). Remove the thick layer off the top and discard it as this contains most of the caesins, which some find difficult to digest. When the milk is warm, transfer it into the glass bowl.
3. Gently add one sachet of Probiotic Complex, one sachet of Culture Starter, and one sachet of Bovine Colostrum and stir thoroughly with a tablespoon until all the clumps have been dissolved. A simple way to dissolve clumps is to add the powders to a small amount of the milk that you are using for the preparation, mix very well, and then add this small amount to the rest of the milk only when all the clumps have been dissolved.
4. Loosely cover the bowl with aluminium foil or kitchen paper so that air can pass over the fermenting milk while it is covered. DO NOT COVER WITH AN AIRTIGHT COVERING!
5. Set the bowl aside in a draft-free spot where it will not be disturbed. Do not mix or move it. Depending on the room temperature, it will ferment in 24-48 hours. You can check, 24 hours later from the beginning, if the thickness of it is correct. If you are not sure about its thickness, you can remove a tiny part of the surface (near the rim) by a tablespoon. If it is not as thick as expected, wait up to 24 additional hours until it is thick enough (it can stay at room temperature for a maximum of 48 hours). You can check occasionally, but without stirring, the process of stirring will stop the fermentation process. It is fermented when it reaches a yogurt-like texture.
6. Mix it well using a tablespoon once it has reached the appropriate thickness. If any clumps are present, strain it using a strainer.
7. Split it into 10 single serving sizes using glass jars with a lid.
8. Store it in the refrigerator for at least two hours before drinking.

Directions for Bravo preparation (with yogurt maker) Switch on the yogurt maker, place the glass jars open and without lids in their slots, close the lid, and let it warm for about one hour. Prepare the milk as described above (warm it up and add the powders as per points 1-3). When you have dissolved the powders of the kit in the milk, pour it into the warm glass jars, close the lid of the yogurt maker again, and let it go for about eight hours. While fermentation occurs, the glass jars in the yogurt maker stay with no lids during this time. The product will usually be completely fermented at the end of the eight hours. Retrieve the glass jars, close them with their lids, and store them in the refrigerator. Refrigerate at least two hours before drinking.
Directions for preparation using other types of milk The kit can also be used to ferment other types of animal milk (such as goat, camel, and sheep milk) following the exact directions described above for cow milk. It is not ideal, but can also ferment with plant-based ‘milk’ (from rice, soy, and almond), but it is not optimal. In this case, points 1 and 2 do not apply. Please note that changing the source and kind of milk can vary the thickness and taste of the final product. Note: The three components of the kit (Probiotic Complex, Culture Starter, and Bovine Colostrum) should not be used separately; they are not intended to be used directly.
CLEANING OF THE TOOLS Utensils necessary for the preparation of your probiotic can be washed in a regular dishwasher.
NUTRITIONAL INFORMATION 100 ml (3.3 oz) of liquid fermented product made using bovine milk contains about 80 Kcal. The number of calories, fats, carbohydrates, proteins, vitamins, and other nutrients depends on the type of milk used to prepare the product.
STORAGE Storage of the Kit (containing the powders). Store the Kit (the silver bags with its three powder components) in the refrigerator, in its original packaging, at a temperature between +2 and +4 °C (35-39 °F), away from humidity. The Kit with the powders can also be stored at room temperature (no more than 25°C) until the date written on the labels/bags of each component.
Storage of the liquid fermented drink. Store the fermented drink in closed, individual glass containers in the refrigerator at a temperature between +2 and +4 °C (35-39 °F). It can be stored in the fridge for up to 10 days.
SUGGESTIONS FOR CONSUMPTION AND WARNINGS The fermented and ready-to-drink probiotic has an expiration of about ten days if stored correctly in the refrigerator. It may not be frozen since it contains live microorganisms. Use 3.3 oz (100 ml) as a serving size daily. Shake/mix well before consuming. If desired, flavour with high-grade honey or fruit. Do not consume past the expiration date. Do not exceed the suggested serving size. Keep the product out of reach of children. The kit DOES NOT contain artificial colours, flavours, preservatives, added sugar, gluten, soy, wheat, egg, rice, starch, hormones, or antibiotics.
